….or at least in can be!! And this one is! And delicious too!
The secret? …
…CHICKPEAS!
I know what you’re thinking….ewww gross, right? WRONG! But that’s kinda what I thought too at first when I saw someone post about chickpea cookie dough; however, I decided to try it and I am SO GLAD I did. It’s super simple and easy, and you can eat a scoop of it and not feel guilty (not that you should anyway, because all food is great in moderation, and you shouldn’t shame yourself for a having treats sometimes…..ok soapbox off now). And it has some great fiber and protein, and options to boost it more however you want depending on what you add!
For my first (of hopefully many to come) attempt, it went like this:
- Start with 1 can of chickpeas/garbanzo beans, drain, and dump in food processor.
- Add 1/2 cup nut butter (I used 1/4 cup Bae’s Butter Cashew Butter and 1/4 cup PB Fit)
- Mix in 2 teaspoons vanilla extract, 2 1/2 tablespoons maple syrup (I used sugar free), 1/2 tsp cinnamon, 1 dark chocolate bar broken up in pieces (I like it super dark, as in 88% or more…I even like the taste of 100% dark baking bars, but you do you!!)
- Pulse everything together in the food processor
- Scoop and enjoy and sweet, and yet healthy protein packed treat!!
Once you’ve got your base of the chickpeas and nut butter, the possibilities are really endless!! I’m already thinking about making some again soon and trying things like chopped nuts, chia seeds, matcha powder, and more!
